Food Week Degustation Dinner

 

Sample the best of the Central West in this year’s FOOD Week Degustation delight.

Degustation dining is becoming increasingly popular throughout the Central West, and for good reason.

Given that five to eight dishes are served in a degustation meal, they’re often a good value option when wanting to sample a full menu in as little as one sitting.

It’s also a chance to evaluate a chef’s signature dishes, and the philosophy behind a restaurant; the very essence of how and why certain dishes appear on a plate in front of you.

The Greenhouse of Orange is very excited to present the 2018 Central West Degustation Dinner on Wednesday 11 April 2018 as part of the Orange region’s FOOD Week celebration.

This is our first FOOD Week, and we’re eagerly anticipating this opportunity to send our extreme passion and endorsement for Central West sustainably sourced produce into overdrive!

Greenhouse Executive Chef Bronwyn Jordan has personally selected five dishes that will be matched with our finest selection of local wines, to take you on a voyage of discovery from farm to fork that will delight the senses.

The Central West Degustation Dinner menu will feature Fresh Pastures confit pork belly, paired with parfait, rillettes as well as smashed pea and pig puree for the first course; before peach and rosemary jelly gnocchi to be served with charred corn, fried sage and farm pumpkin with Millthorpe saffron and burnt butter.

Course three will be Wagyu beef rump with bone marrow fondant potato, charred farm greens, beer soil and jus. Moving onto the sweeter side, you will sample green fig clafoutis with Greenhouse-made yoghurt ice-cream and topped with Nasturtium flowers; before rounding out the evening with a Second Mouse Cheese plate featuring Kai Woltmann’s ‘Frieda’, double brie and ‘Henri’ cheeses complimented with cherry jelly, pickled hazelnut paste, oat crackers and handmade lavos.
